The collection
Two spirits,
one standard

01 — Vodka
Organic Vodka
Audécious™ was born during après, where our love of cocktails usually started with vodka. So we set out to make one that didn’t ask for a compromise between taste and how it was farmed. The answer was organic sugarcane.
Unlike grain or potato, sugarcane ferments straight from the stalk. No enzymatic breakdown, no heavy processing — a shorter, cleaner road from crop to spirit.

02 — Aquavitae™
Organic Aquavitae™
Aquavitae™ — water of life — is what distillers once called whisky. Traditional ageing waits years, sometimes decades, for a barrel to do its work. We use accelerated oak-finishing technology instead, controlling wood exposure and conditions so those same reactions happen in weeks.
It isn’t flavouring and it isn’t a shortcut. It’s the chemistry of ageing, given better conditions to run — with far less energy, warehouse space and waste behind it.

“The Aquavitae™ rivals any 15-year-old scotch I’ve tasted. Sweet, smooth, with a rich finish.”

03 — What comes next
Spirit of future
The bottle was designed to carry a range, not a single spirit. Gin and Rum are in development on the same glass, the same organic standard and the same alpine hand.

Concept renders. Organic Vodka and Organic Aquavitae™ are available now; Gin and Rum are not yet in production.
Recognition
Judged, blind, by people who taste for a living
Platinum, LA Spirits Awards 2024. Double Gold, SIP Awards 2024. Both awarded to Audécious™ Organic Vodka.
Common questions
Before you pour
What is Audécious™ made from?
Audécious™ Organic Vodka is distilled from certified-organic sugarcane, which ferments straight from the stalk. Audécious™ Organic Aquavitae™ is an organic single malt spirit finished with accelerated Mizunara oak technology.
What is Aquavitae™?
Aquavitae™ — Latin for water of life — is what distillers historically called whisky. Ours is an organic single malt spirit finished in weeks rather than years by controlling wood exposure and ageing conditions.
Where can I buy Audécious™?
Audécious™ is poured in bars, hotels and restaurants across Whistler and Vancouver. See the full list on our Where to drink page, or contact us if you would like to stock it.
Which awards has Audécious™ won?
Audécious™ Organic Vodka was awarded Platinum at the LA Spirits Awards 2024 and Double Gold at the SIP Awards 2024.
In development
We’re building the tools to map how oak and time shape flavour — so a bar could one day order an expression made to its own palate.
This work is at the research stage. We’ll say more when it has earned it.
In their words
The people who pour it

“Right off the bat, smells super clean on the nose. Really nice, really clean. Subtle sweetness at the end there. No burn — that’s very nice. Really elevated.”

“It’s surprisingly smooth and has a nice sweetness. Unlike most vodkas, it doesn’t burn or have a strong bite, which I appreciate. I’m impressed by its flavour and excited to work with it.”

“This is super smooth — I can see myself and my friends finishing a bottle. Knowing what Audécious™ is capable of opens up a lot more cocktail ideas that I only dreamt of before.”

“So smooth already, and no burn drinking it neat. But the massive difference is when the vodka is used in our cocktails — there is no comparison.”

“It has a texture I’ve never had in vodka before. Normally vodka falls off your tongue. This has a body to it. Normally I would never take a vodka shot — this one I would.”

“I think it’s super smooth, it doesn’t make me cringe. It feels good on the soul.”

“Definitely something I can sip on, without feeling the burn after sipping it — even without chilling it. I’m gonna take this with me.”

“That’s very smooth — I can drink it like whisky. Normally I don’t drink vodka either, so this is perfect.”
Proof, not adjectives
Certified organic, and able to show it
Anyone can print the word on a label. Certification means an accredited body inspected the farm, the distillery and the paperwork, and signs off every year.

Certified under the USDA National Organic Program. Inspected annually — the farm, the distillery and the paperwork.
- Certifying agent
- Colorado Department of Agriculture
- Standard
- 7 CFR Part 205

Certified to the European Union organic regulation, with the operator code shown on every label alongside the origin statement.

Both marks are legally controlled. They appear here because the operation carries the certification behind them — the USDA seal with its certifying agent named, and the EU leaf with its operator code and origin statement, as each scheme requires.

Serving facts
Distilled spirits carry no carbohydrate, fat or protein. The calories come from the alcohol itself — which is why the number moves with ABV and pour size, and nothing else.

Working it out
Alcohol carries roughly 7 calories per gram, and pure alcohol weighs about 0.789 g per ml. So a 44 ml pour at 40% ABV contains 17.6 ml of alcohol — near enough 13.9 grams, and around 97 calories.
At 40% ABV that same pour is one standard drink. Change the ABV and both numbers move together.
There is no sugar, no carbohydrate and no gluten in a distilled spirit — distillation leaves them behind. Our base is organic sugarcane, so nothing gluten-bearing enters the process at all.
